How a Muffin Becomes a Cupcake!

I’m back with my mini obsession! This time we are doing mini banana pecan muffins! Wait for it…. topped with CREAM CHEESE FROSTING! I love a good banana nut muffin but for me, it’s the cream cheese frosting that really makes them! It basically turns them into a banana cupcake if you ask me! But you can honestly call them whatever you’d like, muffin… cupcake… mufcake… you can decide!

These little babies are gluten-free, sugar-free and PACKED with the best banana taste! They use simple ingredients that will not only make your taste buds sing but also give your body some nutrients! All you need is some almond flour, egg, bananas, nut butter and some spices!


Banana Muffins

  • 2 large ripe bananas
  • 1 egg
  • 1/2 cup nut butter (I used MaraNatha’s NEW Banana Raw Almond Butter)
  • 1 1/2 cup almond flour
  • 1 scoop collagen (totally optional but I used Ancient Nutrition Vanilla)
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup crushed pecans
  • any other mix-ins you want (chocolate chips, walnuts, etc)

Small Batch Cream Cheese Frosting

  • 4 oz cream cheese, softened
  • 1 tbsp melted butter
  • 1 tbsp brown sugar
  • 1/2 tsp vanilla extract
  • 1/2 tbsp honey


  • Preheat oven to 350 degrees F
  • Prepare muffin tin with either liners or grease with cooking spray
  • In a large bowl, mix the bananas, egg, nut butter and vanilla until fully combined
  • In a different bowl, mix almond flour, cinnamon, baking soda, collagen (optional) and salt until combined
  • Add the dry ingredients into wet and mix until combined
  • Fold in pecans or any other mix-ins
  • Fill muffins tins about 3/4 full (I used an ice cream scoop to get even amounts)
  • Bake for 15-20 minutes or until a toothpick comes out clean when inserted
  • For the frosting, use electric mixer to combine cream cheese, butter, brown sugar and vanilla
  • Once frosting starts to become thick, slowly add the honey in and beat until fully mixed
  • Once muffins have cooled, top with frosting, sprinkle with more pecans if you desire and ENJOY!
