Pancake Coffee Cake

I am all for making things from scratch and for the most part that is usually what I do but on occasion I like the use a little bit of help! There are so many ways to use pre-made pancake mix (besides just the obvious pancakes) and I love experimenting with these mixes!

Flourish Protein Pancake recently gifted me with some of their pancake mixes and saw it as a sign to get into the kitchen and let the creative juices flow! What really excited me about this mix were the ingredients! It has very simple and healthy ingredients while also packing 23 grams of protein per serving! They have three flavors (Vanilla, Chocolate, and Buttermilk which is what I used for this recipe)!

Ingredients

  • 2 1/2 cups of pancake mix (one that only requires water to make)
  • 1/3 cup of sugar
  • 1/2 cup chocolate chips
  • 1/2 cup water
  • 1/2 cup greek yogurt
  • 1 tsp vanilla
  • 1/4 cup sugar
  • 1 tsp cinnamon
  • 1 cup walnuts or pecans

Instructions

  • Preheat oven to 350F and spray and 8×8 pan with non-stick spray (and can cover with parchment paper to make taking it out easier)
  • In a bowl, mix pancake mix, sugar and chocolate chips together
  • Then add water, greek yogurt and vanilla. Mix until fully combined. *The batter will be very thick*
  • Pour and spread batter into baking dish
  • Mix 1/4 cup of sugar, cinnamon and nuts into a smaller bowl and sprinkle on top of batter
  • Bake for 25-30 minutes until golden brown (or until a toothpick comes out clean)
