There is nothing quite like a warm, soft, gooey cinnamon roll. Am I right?! I am all for the large pans of rolls but sometimes all I want is just one that I can customize to whatever flavoring I’m feeling! One of the highlights of my 2020 quarantine was perfecting my SINGLE-SERVE CINNAMON ROLL!

Here she is, WHAT A BEAUTY! The best part (besides how delish they are) is that the dough is only 2 ingredients and you get to customize the filling! Some of my favorite ones I tried were the classic of course, apple pie, lemon poppyseed, carrot cake… and then I got wild and crazy and went SAVORY with a spinach artichoke and a pizza roll! The options are endless and the rolls are unlimited!
Ingredients
Dough
- 1/2 cup self rising flour
- 1/2 cup greek yogurt
Filling
- 1 tbsp coconut oil (melted and cooled)
- 1 tbsp coconut sugar
- 1 tsp cinnamon
Icing
- 1/3 cup powdered sugar
- 1-2 tsp almond milk
Instructions
- In a bowl, mix flour and greek yogurt until a dough forms
- Dump the mixture onto a lightly floured work surface and knead by hand for about 5 minute, until dough is smooth
- Roll dough into long rectangle (cut sides to make the edges straight)
- Spread coconut oil over dough and sprinkle coconut sugar and cinnamon
- Cut the rectangle in half so you have two equal strips of dough
- Take one strip and roll tightly than add second strip to the end of the first strip and roll, creating one large roll
- Place roll in ramekin and microwave for 90 seconds (time may vary depending on microwave)
- Make icing and pour over warm roll
